Hervé Gatineau, Owner & Head Patissier

"I am keen that Gatineau patisserie should always reflect my drive for quality and flair. While keeping one eye on the latest European trends in patisserie, my aim is to introduce new and exciting creations into our product range - in order to thrill and delight our customers."




After training in Toulouse as an apprentice aged 15, Hervé Gatineau worked as a pastry chef in businesses abroad - including the renowned Laurent Bakery in Sydney, Australia - learning a variety of new skills and techniques.

Hervé first arrived in the UK in 1997 to work at the main centre of operations for Maison Blanc in London’s Park Royal.  He stayed there for ten years, several of those as Head of Pastry.

Gatineau patisserie – Hervé’s first solo enterprise – has been trading successfully in Summertown for seven years and has established the Gatineau name locally as a patisserie and boulangerie of some distinction.

Along with an elite group of chefs, Hervé visits France annually to work with current leaders in pastry, including Frederic Allard, Nicolas Serrano and Christophe Michalak. 

Hervé is married to Mary, and they have two beautiful sons who help to inspire and shape their father's recipes with their own suggestions! He is also keenly involved with charities - recently raising over £1000 for SCOPE by taking part in the London to Paris 24-hour cycle ride.
